Title:   Vegetarian Reuben Sandwich

1 onion- chopped
2 garlic cloves- minced
1 1/2 c sauerkraut
1 t paprika
1 t caraway seeds
1/2 t thyme
1/4 t black pepper
1 pckg (8 oz.) seitan- drained and thinly sliced
12 slices rye bread
Stone-ground mustard
Tofu Mayo [see recipe]- or fat-free nayonaise
2 tomatoes- sliced
Directions:   Heat 1/2 c of water in a large nonstick skillet and cook the onion and garlic, stirring occasionally, until the onion begins to brown, about 8 minutes. Stir in the sauerkraut, paprika, caraway seeds, thyme and black pepper. Cook 5 minutes, stirring occasionally. Add the seitan slices and cook, stirring often, until thoroughly hot. Toast the bread. To assemble the sandwiches, spread the bread with mustard and Tofu Mayo or nayonaise. top with the sauerkraut mixture and tomato slices.
Makes:   6 sandwiches
