Title:   Garbanzo Salad Sandwich

1 c cooked garbanzo beans- drained
1 celery stalk- finely sliced
1 green onion- finely chopped- including green top
2 T Tofu Mayo [see recipe]- or fat-free nayonaise
2 t stone-ground mustard
2 T sweet pickle relish
1/4 t sea salt- omit if using canned beans
8 slices whole wheat bread- or 4 pieces of pita bread
4 lettuce leaves
4 tomato slices
Directions:   Mash the garbanzo beans with a fork or potato masher, leaving some chunks. Add the celery, green onion, Tofu Mayo, mustard and relish. Add salt to taste. Spread on whole wheat bread or serve in pite bread with lettuce and sliced tomatoes.
Makes:   4 sandwiches
