Title:   Hoppin John Salad

2 c cooked black-eyed peas (1 c dry)- or 1 can (15 oz.) drained
1 1/2 c cooked brown rice (1/2 c uncooked)
1/2 c finely sliced green onions
1 celery stalk- thinly sliced (about 1/2 c)
1 tomato- diced
2 T finely chopped fresh parsley
1/4 c lemon juice
1 T olive oil
1/4 t sea salt
1 to 2 garlic cloves- crushed
Directions:   Combine the first 6 ingredients in a mixing bowl. Mix together the remaining ingredients to make a vinaigrette and pour over the salad. Toss gently. Chill 1 to 2 hours if time permits.
Makes:   about 5 cups
