Title:   Rainbow Salad

3 c shredded green cabbage
1 1/2 c shredded red cabbage
2 carrots- grated or julienned
2 stalks celery- thinly sliced
3 green onions- sliced
1 small green apple- finely chopped or julienned
1 T lemon juice
1/3 c Tofu Mayo [see recipe]- or fat-free nayonaise
1/3 c apple juice concentrate
Directions:   Place the red and green cabbage, the carrots, celery and green onions in a salad bowl. Mix together the apple with the lemon juice and add it to the salad bowl. Add the Tofu Mayo and apple juice concentrate and mix well. Chill before serving.
Makes:   4 to 5 cups
