Title:   Ensalada de Frijoles

3 c cooked brown rice or 4 warm corn tortillas
6 c prewashed salad mix
1 carrot- grated or cut into small julienne strips
1 can (15 oz.) black beans- drained and rinsed
1 c peeled and grated jicama
2 tomatoes- diced or cut into wedges
1 can (15 oz.) corn- drained- or 2 c fresh or frozen corn
1/2 c cilantro leaves- coarsely chopped- optional
1/4 c salsa
1/4 c seasoned rice vinegar
1 garlic clove- crushed or pressed
Additional salsa for topping
Directions:   Warm the brown rice or corn tortillas in a microwave or on the stove. Divide among four plates, then cover with a layer of salad mix. Top with carrot, black beans, jicama, tomatoes, corn and cilantro leaves. Mix together the salsa, seasoned rice vinegar, and crushed garlic. Sprinkle the salsa-vinegar dressing over each of the salads, then top with additional generous spoonfuls of salsa.
