Title:   Texas Caviar

1 can (15 oz.) black-eyed peas- drained
1 red or yelloe bell pepper- seeded and diced
1/2 c chopped green onions
1 tomato- diced
1/4 c chopped fresh cilantro- optional
1 t finely chopped jalapeno pepper
1/4 c seasoned rice vinegar
1 t ground cumin
Directions:   Combine all ingredients in a large bowl and toss gently to mix. Chill 1 to 2 hours. Serve with wedges of pita bread or crusty French bread.
Makes:   3 cups
