Title:   Zuccamole

1 1/2 c sliced zucchini
2 T chopped green onions
1 garlic clove- peeled
2 t lemon juice
1/4 t cumin
1/4 t sea salt
1/2 c diced tomato
Directions:   Steam the zucchini until it is tender-crisp. Remove from steamer and cool. Puree the cooled zucchini in a food processor for 2 to 3 minutes, until very smooth. Add the green onions, garlic, lemon juice, cumin and salt and process briefly. Transfer from the processor to a serving bowl and stir in the diced tomato. Serve as a fat-free guacamole alternative for tostadas or burritos, or as a dip with baked tortilla chips.
Makes:   about 1 cup
