2 c whole wheat or whole wheat pastry flour
1/2 c raw sugar or other sweetener
1 T baking powder
1/2 t baking soda
1/2 t sea salt
1/2 t cinnamon
1/4 t nutmeg
1 3/4 c cooked sweet potatoes- or 1 can (15 oz.) drained
1/2 c water
1/2 c raisins
|Directions:||Preheat oven to 375F. Mix together the flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg in a large bowl. Mash the sweet potatoes and add them along with the water and raisins. Stir until just mixed.
Lightly oil-spray muffin cups and fill to the top. Bake 25 to 30 minutes, until the tops of the muffins bounce back when pressed lightly. Let stand 1 to 2 minutes before removing from the pan. when cool, store in an airtight container in the refrigerator.
