Ingredients: |
3 c whole wheat pastry flour
1/2 c raw sugar or other sweetener
2 t baking soda
1/2 t sea salt
2 c finely chopped green apple
1 1/2 c soy milk or rice milk
2 T cider vinegar
1/3 c blackstrap molasses*
3/4 c raisins
1/4 c chopped walnuts

Directions: | Preheat oven to 375F. Mix together the flour, sugar, baking soda and salt in a mixing bowl. Quarter and core the apples, then chop them finely in a food processor or by hand. Place them into a large mixing bowl and add the milk, vinegar and molasses. Stir until just mixed, then stir in the raisins and walnuts. Lightly spray muffin cups with vegetable oil spray and fill to the top with batter. Bake 30 to 35 minutes, until the tops bounce back when lightly pressed. Remove the muffins from the oven and let stand about 5 minutes, then remove from the pan and cool on a rack. Store in an airtight container. *If you choose to substitute regular molasses, which is significantly sweeter, you can reduce the amount of sugar, or eliminate it altogether, depending on how sweet you like your muffins. |
