Title:   Double Bran Muffins

2 c whole wheat or whole wheat pastry flour
3/4 c wheat bran
3/4 c oat bran
1/2 t sea salt
1 t baking soda
1 t cinnamon
1/4 t nutmeg
1 apple- finely chopped or grated [use a food processor]
1/2 c raisins
1 1/2 c soy milk
1 1/2 T vinegar
1/4 c Prune Puree [see recipe]- or prune baby food
1/3 c molasses
Directions:   Preheat oven to 350F. Mix together the flour, brans, salt, soda and spices. In a separate bowl, mix together the remaining ingredients. Combine the wet and dry ingredients and stir to mix. Spoon into muffin pans that have been sprayed with a nonstick spray and bake until the tops bounce back when lightly pressed, about 25 minutes. Let stand 1 to 2 minutes, then remove from pan and let stand 5 minutes before serving.
Makes:   12 muffins
