Title:   Corn Bread

1 1/2 c soy milk
1 1/2 T vinegar
1 c cornmeal
1 c barley flour
2 T raw sugar or other sweetener
1 T baking powder
1/2 t baking soda
1/2 t sea salt
Directions:   Preheat oven to 425F. Combine the soy milk and vinegar and set aside. Mix the cornmeal, barley flour, sugar, baking powder, baking soda and salt in a large bowl. Add the soy milk mixture and stir until just mixed. Spread the batter evenly in an oil-sprayed 9x9-inch baking dish. Bake until the top is golden brown, 25 to 30 minutes. Serve hot.
