Title:   Quick and Easy Brown Bread

1 1/2 c soy milk
2 T vinegar
3 c whole wheat pastry flour
2 t baking soda
1/2 t sea salt
1/2 c molasses
1/2 c raisins- if desired
Orange marmalade for serving- optional
Directions:   Preheat oven to 325F. Mix the soy milk with vinegar and set aside. In a large bowl, stir the whole wheat pastry flour, soda and salt together. Add the soy milk mixture and molasses. Stir to mix, then stir in the raisins. Do not overmix. Spoon into a large nonstick or oil-sprayed loaf pan and bake for 1 hour.
Makes:   1 loaf
