Title:   French Toast

1 c soy milk
1/4 c whole wheat pastry flour
1 T maple syrup
1 t vanilla
1/2 t cinnamon
6 slices whole wheat bread
Fresh fruit, spreadable fruit or maple syrup for serving
Directions:   Combine and whisk or blend all ingredients except the bread until smooth. Pour into a flat dish. Soak the bread in batter until it is soft but not soggy. Cook in an oil-sprayed nonstick skillet until golden brown, 2 to 3 minutes per side.
Makes:   6 slices
