Title:   Cornmeal Flapjacks

1/2 c cornmeal
1/2 c whole wheat pastry flour
1/4 t baking powder
1/4 t baking soda
1/4 t sea salt
1 c soy milk or rice milk
2 T maple syrup
1 T vinegar
Fresh fruit, spreadable fruit or maple syrup for serving
Directions:   Stir the cornmeal, whole wheat flour, baking powder, baking soda and salt together in a mixing bowl. In a separate bowl, combine the milk, syrup and vinegar. Add the flour mixture and stir just enough to make a smooth batter.

Preheat a nonstick skillet or griddle, then mist it with vegetable oil spray. Pour small amounts of batter onto the heated surface and cook over medium-high heat until the tops are fairly dry. turn carefully with a spatula and cook the second sides until golden brown, about 30 seconds. Serve immediately with fresh fruit, spreadable fruit or maple syrup.
Makes:   16 2-inch pancakes
