Title:   Multigrain Pancakes

1 c soy milk or rice milk
2 T apple cider vinegar
1 T maple syrup
1/4 c Bob's Red Mill 10 Grain Cereal or similar multigrain cereal
1/2 c whole wheat pastry flour
1/2 t baking soda
1/4 t sea salt
Fresh fruit, spreadable fruit or maple syrup for serving
Directions:   Mix the milk, vinegar, maple syrup and cereal and let stand 10 minutes. In a separate bowl, combine the flour, soda and salt. Add to the milk mixture and stir to mix. Preheat a nonstick skillet and mist lightly with vegetable oil spray. Pour in enough batter to make several small pancakes. Cook until the tops bubble and the edges are dry, then turn carefully with a spatula and cook the flip sides until golden brown. Serve at once.
Makes:   20 3-inch pancakes
