Title:   Whole Wheat Pancakes

1 banana
1 1/4 c soy milk or rice milk
1 T maple syrup
1 c whole wheat pastry flour or whole wheat flour
2 t baking powder
1/4 t sea salt
Directions:   In a large bowl, mash the banana, then stir in the soy milk or rice milk and maple syrup. In a separate bowl, mix the flour, baking powder and salt together; then stir them into the banana mixture. Preheat a nonstick skillet or griddle, then spray it lightly with a vegetable oil spray. Add small amounts of the batter and cook until the tops bubble. Turn with a spatula and cook the flip sides until golden brown. Serve at once.
Makes:   24 2-inch pancakes
