Title:   Creamy Potato Salad

6 medium potatoes
1/2 c eggless mayonnaise
1/4 c yellow mustard
2 T distilled white vinegar
1/2 onion- chopped
1/2 c chopped celery
Sea salt and pepper- to taste
Paprika- optional
Directions:   Cut the potatoes into cubes and cook in boiling water for 20 minutes. Drain and let cool completely. In a large bowl, combine with the remaining ingredients. If desired, sprinkle paprika on the top.
Makes:   4 to 6 servings
