Title:   Ultra-Fudge Brownies ****

1 1/4 c whole wheat flour
1 c sugar- or other sweetener
1/2 c unsweetened cocoa or carob powder
1/4 t baking powder
1/4 t sea salt
2 T organic canola or safflower oil
1 T vanilla extract
3/4 c firm silken tofu- crumbled
1/2 c water
1/2 c pure maple syrup
1/2 to 1 c chopped walnuts
Directions:   Preheat oven to 350F. Mist an 8-inch square glass baking pan with nonstick cooking spray and set aside. Combine flour, sugar, carob or cocoa powder, baking powder, and salt in a medium bowl and stir together until well combined. Combine tofu, water, maple syrup, oil and vanilla in blender and process until completely smooth. Pour into the dry ingredients and stir until well combined. Fold in walnuts. Pour batter evenly into prepared pan. Bake on center rack of oven for 40 minutes, or until a cake tester inserted in the center comes out clean. Cool brownies in the pan. Cut and serve.
Makes:   12 to 16 brownies
