Title:   Instant Chocolate Pudding
Category:   Dessert - Clean (Only natural/organic ingredients), Vegetarian

1 1/2 c (about 12 oz.) firm silken tofu- crumbled
1/4 to 1/2 c dark brown sugar, unbleached cane sugar or pure maple syrup
1/3 c unsweetened cocoa or carob powder
2 t vanilla extract
Pinch of salt- optional
Directions:   Place all ingredients in food processor and blend several minutes until smooth and creamy. Chill in the refrigerator until serving time.

Tip: start with the smaller amount of sugar and add a little more, as needed to suit your taste.
Makes:   about 1 3/4 cups
