Title:   Crispy Rice Bars

2/3 c brown rice syrup
1/4 c natural almond butter or peanut butter
1/2 t vanilla extract
2 c crisped rice cereal
Directions:   Mix an 8-inch square pan with nonstick cooking spray and set aside. Place brown rice syrup and nut butter in a small saucepan and warm until mixture is softened and smooth. Remove from heat and stir in vanilla extract. Combine cereal and the addition of your choice in a large bowl. Pour warm mixture over cereal mix and combine carefully, using a wooden spoon. Work as quickly as possible (this is especially important if using carob chips so they do not melt). Pack mixture evenly into prepared pan, pressing gently with your fingers. Cover pan with plastic wrap and chill until firm. Slice into squares and store in an airtight container in the refrigerator.

Additions: 1/2 c lightly roasted chopped almonds or walnuts; 1/2 c currants, raisins or finely chopped apricots; or 1/2 c nondairy carob chips.
