Title:   Roadhouse Hash

1 1/2 t olive oil or organic canola or safflower oil
1/2 c grated carrots
1/2 c diced red or green bell peppers
1/2 c thinly sliced scallions
1/4 t turmeric
1 lb. firm regular tofu- rinsed, patted dry and crumbled
1 c drained cooked or canned red kidney beans
2 T nutritional yeast flakes
Seasoned salt and pepper
2 T minced fresh parsley- optional
Directions:   Heat oil in a large skillet over medium-high heat. When hot, add carrots, pepper, scallions and turmeric and saute 3 to 4 minutes. Add tofu, beans, nutritional yeast flakes, seasoned salt and pepper. Mix well and continue to cook, stirring almost constantly, for 5 to 7 minutes, or until hot. Stir in parsley, if using, and mix well. Serve at once.
Makes:   4 to 6 servings
