Title:   Green Peppers and Tomatoes

4 medium green bell peppers- seeded and diced
1 T olive oil
2 t crushed garlic
3 c chopped fresh or canned tomatoes- undrained
2 T ground coriander
1/2 t sea salt
Directions:   Heat oil in a large skillet. When hot add green peppers and cook until tender. Stir in garlic and saute for 1 minute. Stir in tomatoes, coriander, and salt. Cover and cook 5 minutes longer. Serve warm or chilled with pita bread for dipping.
Makes:   4 to 6 servings
