Title:   Vegan Sloppy Joes

2 t olive oil
1 medium onion- diced
8 oz. tempeh- well crumbled
2 T low-sodium tamari
1/2 c clean ketchup
1 t prepared yellow mustard
1 t apple cider vinegar
1 t sweetener of your choice
4 whole grain burger buns- split
Directions:   Heat oil in a medium saucepan. When hot, add onion, tempeh, and tamari and saute until onion is tender and lightly browned, about 10 minutes. Add remaining ingredients except the buns and mix well. Reduce heat to medium and simmer uncovered for 10 minutes, stirring often. Spoon hot mixture over split buns. Serve at once.

Variation- if preferred, replace tempeh with 1 c TVP that has been rehydrated in 7/8 c of boiling water. Let rest for 5 minutes, then proceed with recipe as directed.
