Title:   Savory Spinach Spread

1 1/2 c (about 12 oz.) firm silken tofu- crumbled
1 T fresh lemon juice
3/4 t onion powder
1/2 t tarragon
1/4 t garlic powder
1/4 t sea salt
1 box (10 oz.) frozen chopped spinach- thawed
1 c shredded carrots
1/4 c thinly sliced scallions
Directions:   Combine tofu, lemon juice, onion powder, tarragon, garlic powder, and salt in blender or food processor and blend until smooth and creamy. Transfer to a medium bowl. Squeeze spinach as dry as possible. Stir into tofu along with carrots and scallions. Mix well. chill thoroughly before serving. Spread on crackers, pita triangles or thinly sliced French bread.
Makes:   about 2 cups
