Title:   Spicy Cucumber Salad

2 c thinly sliced English cucumbers
Sea salt
2 T brown rice vinegar
2 t toasted sesame oil
Pinch of cayenne pepper
Directions:   Sprinkle cucumbers with plenty of salt and leave to drain in a colander for at least 30 minutes until they soften and lose their juices. Rinse under cold water and drain well. Transfer to a medium bowl and sprinkle with vinegar and oil. Season with cayenne pepper. Toss to mix thoroughly. Serve at once or chill.
