Title:   Citrus Fruit and Grain Salad

4 c cooked whole grain- brown rice, wild rice, bulgur, barley or a combination
2 navel oranges- peeled and chopped
1/2 c minced fresh parsley
1/3 c raisins
3 T fresh lemon juice
2 T extra-virgin olive oil
1 T wine vinegar- red, white or balsamic
2 t Dijon mustard
Sea salt and pepper
Directions:   Combine grain, oranges, parsley and raisins in a large bowl. In a small bowl whisk together oil, lemon juice, vinegar and mustard. Pour over rice and fruit and toss well. Season with salt and pepper and toss again. Serve chilled.
