Title:   Green Pea and Spinach Soup

5 1/2 c water
1 medium onion- sliced
4 medium carrots- peeled and sliced
1 large leek- cleaned well and sliced
1/2 t basil
1 large bunch spinach- stems removed
1 c thawed frozen peas
Sea salt and pepper
2 to 3 t fresh lemon juice
Directions:   In a large soup pot, combine water, onion, carrots, leek and basil and bring to a boil. Reduce heat, cover, and simmer until vegetables are tender, about 25 to 30 minutes. Stir in spinach and peas and cook a few minutes until spinach wilts. Remove from heat. Puree soup in batches in a blender until smooth and return to the pot. Season with salt and pepper to taste. Add enough lemon juice to heighten flavor. Serve hot.
