Ingredients: |
1 1/4 c whole wheat flour
2 t baking powder
1/2 t sea salt
1 T cinnamon
1/3 c agave nectar
1/3 c honey
3/4 c buttermilk
1/4 c melted Earth Balance butter- or soy butter
2 T melted Earth Balance butter- or soy butter
3/4 c oat flour
1/4 c old fashioned oats
2 T agave nectar

Directions: | Combine first 4 ingredients in a bowl. Add the agave and honey, mix slightly. Add buttermilk and melted butter. Mix until just blended. Pour into an 8x8-inch greased and floured pan. In a bowl, combine the oats and the oat flour. Add in the 2 T melted butter and agave. Mix until a crumbly mixture. If you want it to be a bit more crumbly, add more oat flour one T at a time. Sprinkle this mixture on top of the cake and then bake at 400F for 25 minutes or until done. This crumble topping recipe makes quite a bit of crumble. Use only as much as you want to sprinkle on top of the cake. |
