Title:   Chocolate Buttermilk Cake

Ingredients:  
4 T Earth Balance butter- or soy butter
1/4 c cocoa
1/2 c water
1 egg replacer/substitute
1 t vanilla
1/4 c buttermilk
2/3 c agave nectar
1 1/2 c whole wheat flour
1 t baking soda
1 t baking powder
Directions:   Melt together the first 3 ingredients. Beat together the egg, vanilla and buttermilk and then add to the butter mixture. Add the remaining ingredients and mix until well blended. Pour batter into a non-stick 8x8-inch pan. Bake at 350F for 25 to 30 minutes. The cake should not jiggle when you test it. If it does- it is not quite ready to come out of the oven. Top with cream cheese frosting from the Cream Cheese Avocado recipe but omit the avocado in the frosting for this cake.
