Title:   Chocolate Zucchini Bread

2 c whole wheat flour
1/2 c oat flour
2/3 c chopped walnuts
1/3 c cocoa
1 t baking powder
1 t baking soda
1/2 t sea salt
1 c agave nectar
2 egg replacers/substitutes
1 T ground flax seed
2 T water
3/4 c unsweetened applesauce
1 t vanilla
2 c shredded zucchini
1/2 c grain sweetened chocolate chips- optional
Directions:   Combine all dry ingredients in a large bowl and gradually add the liquid. Add shredded zucchini and nuts last (as well as optional chocolate chips). This recipes makes one very large loaf or two smaller loaves. Pour the batter into one non-stick (or two) pan(s). Bake at 350F for 50 to 60 minutes. The bread is ready when the center bounces back when touched
Makes:   1 large loaf or 2 small loaves
