Title:   Clean Blueberry Muffins *****

6 T Earth Balance butter- or soy butter
1/3 c agave nectar
1/3 c honey
2 T ground flax seed
4 T water
1 t vanilla
2 c whole wheat flour
2 t baking powder
1 t baking soda
1 1/2 c blueberries
Directions:   Combine butter, agave, honey, flax, water and vanilla in a big bowl and beat until smooth. Add in flour, baking powder and baking soda. Fold in blueberries. You can use fresh or frozen berries. A great option is to pour in half of the berries and puree the other half of the berries in a blender or a food processor. It gives the batter a very moist texture. Bake at 400F for 12 to 15 minutes. Muffins should bounce back when touched.

Substitution: substitute pureed peaches for the blueberries.
