Title:   Strawberry Shortcake Muffins

2 c whole wheat flour
1/2 c almond meal- optional
3 t baking powder
1/2 t sea salt
5 T soft Earth Balance butter- or soy butter
1/3 c agave nectar
1/3 c honey
1 egg replacer/substitute
1 t vanilla
1/3 c almond milk
1/2 c homemade jam- or 1/2 c pureed fresh strawberries
6 cut up strawberries- optional
Directions:   Combine butter, egg replacer, vanilla, agave and honey in a bowl and beat until smooth. Add flour, baking powder and salt alternately with milk, mixing until well blended. Mix in the ground almonds. Fold in the jam and berries. I like to add the extra strawberries for taste and texture. Bake at 350F for 17 to 20 minutes or until center of muffins bounce back when touched.
