Title:   Clean Eating Carrot Cake Oatmeal ***
Category:   Breakfast - Clean (Only natural/organic ingredients), Vegetarian
2/3 c steel-cut oats
1 2/3 c milk [nut, soy, rice or nonfat cow]
1/2 c shredded carrots
1 t vanilla extract
1 t ground cinnamon
1/2 t nutmeg
Directions:   Bring milk, vanilla extract, carrots, nutmeg and cinnamon to a boil. Add oats and continue cooking until oats are tender [10-20 minutes]. Top with chopped walnuts or pecans, toasted unsweetened coconut flakes or raisins.
Makes:   4 servings
