Title:   Granola Bars

Ingredients:  
3 T soy butter or olive oil margarine
1/2 c honey
2 c oats
1 c sliced or chopped almonds
1/2 c walnuts
1/2 c chopped pecans
1 t vanilla
1/3 c raisins
1/3 c cut up dates
1/3 c grain sweetened chocolate chips- optional
Directions:   In a large pot combine all ingredients except raisins, dates and chocolate chips. Mix together until the butter and honey are melted and all the oats and nuts are no longer dry. Add in the dried fruit and chocolate chips, if desired. Feel free to change the nuts or add to these, such as cashews, wheat germ or sunflower seeds. If you add more nuts and find that the mixture lacks "wetness" add 1 T of butter and a spoonful of honey.

Once the mixture is done spoon it into a lightly greased 9x9-inch or 11x7-inch pan. The smaller the pan, the thicker your granola will be and it may take a bit longer in the oven. Bake at 300F for 20 to 25 minutes. Cut into squares and store in an air-tight container in the fridge. Just a reminder- while these are quite healthy, they are also very calorie dense so exercise self-control when helping yourself to a portion!
