Title:   Chocolate Peanut Butter Oatmeal Bars

2 c oatmeal
1/2 c honey
1/4 c soy butter or olive oil margarine
1/2 c grain sweetened chocolate chips
1/4 c natural peanut butter
Directions:   In a pot, combine the first 3 ingredients. This is completely optional, but I always add 1/4 c chopped walnuts to the recipe. If you find that the bottom is a bit dry and needs a bit more moisture, add 1 T melted butter. Stir together until bubbly and press into the bottom of an 8x8-inch pan. Set aside as you prepare the topping. Melt together chocolate chips and peanut butter. Mix well and spread on top of the oatmeal bottom. Refrigerate until the topping hardens.
