Title:   Thimble Cookies

Ingredients:  
1/2 c soy butter or olive oil margarine
1/4 c honey
1/4 c agave nectar
1 egg yolk- save the white for later
1/2 t vanilla
1 1/4 c whole wheat flour
3/4 c oat flour
1/2 c almond meal
Clean jam
Directions:   In a bowl, combine and cream the butter, honey, agave, egg yolk and vanilla, then add the dry. Dough should be quite thick and shouldn't stick to yoru hands. Form dough into small balls and dip into slightly beaten egg white, then roll into chopped walnuts. Roll in hands again and place on cookie sheet. Lightly press thumb into the center of each ball. Bake at 350F for 5 minutes. Remove from the oven and press the hole in each cookie a bit deeper. Bake for an additional 8 to 10 minutes. Cookies are done when they can hold their shape but are still soft. Let the cookies cool then put little drops of jam in the thumb print holes.
