1/2 c unsweetened applesauce
1 c agave nectar
1 egg replacer/substitute
2 t vanilla
16 oz. pureed pumpkin
2 1/2 c whole wheat flour
2 1/2 c oat flour
2 t baking soda
2 t baking powder
2 t cinnamon
1/2 t sea salt
1 1/2 c chopped walnuts
1 to 1 1/2 c grain sweetened chocolate chips

Directions: | In a big bowl combine applesauce, agave, egg replacer, vanilla and pumpkin. Mix until well blended then add the remaining dry ingredients. This makes a pretty sticky dough, but you should be able to shape your cookies into balls or drop them off a cookie scoop easily. If not, you may need to add a bit more flour or oat flour. Bake at 350F for 11 to 13 minutes. These cookies can be a bit tricky. If you take them out of the oven too soon they will end up being gooey on the inside. However if you bake them too long they will be dry. They are done when the cookies are still soft to the touch but not mushy. |
