Title:   Clean Eating Zucchini Bread
Category:   Breads - Clean (Only natural/organic ingredients), Vegetarian
2 c whole wheat flour
2 t baking soda
1/4 t nutmeg
2/3 c honey
1 generous cup grated zucchini (about 1 large zucchini)
2 T unsweetened apple sauce
2 T safflower or olive oil
1.5 egg substitute
1 T fresh lemon zest
3/4 c plain soy yogurt
Directions:   Preheat oven to 350F. Oil 1 medium loaf pan with olive oil. In a medium-sized mixing bowl, whisk together the flour, baking soda and nutmeg. In a large mixing bowl, whisk together the honey, zucchini, apple sauce, egg substitute, lemon zest and yogurt. Mix well. Using a wooden spoon, stir the flour mixture into the wet mixture and blend well. Pour the batter into the loaf pan and place in the oven. Bake for 50 to 60 minutes or until a cake tester comes out clean. You may need to cover loosely with foil if the top starts to get too brown.
Makes:   1 loaf
