Ingredients: |
1 lb. whole wheat or rice pasta- linguini, spaghetti or rotini
2 T peanut oil or sesame oil
1 small red onion- minced
6 garlic cloves- minced
1 t curry powder
Cayenne pepper
2 T tomato paste
2/3 c natural peanut butter
1 t sweetener [raw sugar, stevia, agave nectar, etc.]
1 T soy sauce
3 T sherry vinegar
1 1/2 c hot vegetable broth
Sea salt
White pepper- freshly ground
4 green onions- chopped
Flaked unsweetened coconut
Peanuts- chopped

Directions: | Bring a large pot of fresh water to a rolling boil and cook the pasta to al dente. In a saucepan, heat the oil over medium heat and saute the onion for about 5 minutes, until softened. Add the garlic, curry powder, and a good pinch or more of cayenne pepper and stir 1 minute. Mix in the tomato paste. Add the peanut butter, sweetener, soy sauce and vinegar, stirring to make a paste. Slowly begin adding the hot vegetable broth, stirring well to blend. Heat through. Taste for seasoning adjustments and add salt and pepper to taste. Drain the cooked pasta when ready, and pour it into a warmed serving bowl. Pour on the peanut sauce and toss well. Serve at the table, and offer small bowls of chopped green onions, flaked coconut and chopped fresh peanuts for garnish. |
