Title:   Spanish Rice

2 c tomato juice
1/2 c water
1 c Texmati rice- uncooked- or other rice
2 t olive oil
1 t chili powder
1/2 t cumin
3 green onions- chopped
Directions:   Bring the tomato juice and water to a boil in a nonstick saucepan. Stir in the rice, olive oil, spices and onions. Cover and reduce heat to low, simmering until all of the liquid is absorbed, about 25 to 30 minutes. Stir and fluff with a fork before serving.
