Title:   Spicy Hummus

Ingredients:  
1 can (16 oz.) chickpeas- drained and rinsed
1 to 2 T extra-virgin olive oil
1/8 c vegetable broth or water
4 garlic cloves- crushed
1/4 c natural peanut butter
1 T finely chopped red onion
1 jalapeno or chili pepper- seeded and finely chopped
Juice of 1 lime
1/4 t curry powder
1/4 t chili powder
Cayenne pepper
Sea salt
White pepper- freshly ground
2 scallions- chopped- optional
8 pita breads
Olive oil spray
Parmesan cheese- grated- optional
Directions:   Place the chickpeas, olive oil, broth, garlic, peanut butter, onion, jalapeno, lime juice, curry, chili powder and a pinch of cayenne pepper into a blender or food processor. Cover and puree the hummus, until it is a creamy consistency. Taste for seasoning adjustments, adding more lime juice or spices as desired. Garnish with chopped scallions. Serve as an appetizer with Toasted Pita Chips and fresh crisp carrot sticks.

Toasted Pita Chips: Preheat your oven to 400F. Slice the pita breads into triangular pieces and place on an oiled baking sheet. Spray with olive oil and sprinkle with parmesan, if desired. Bake for 10 minutes or until the triangles are browned and crispy.
Makes:   4 to 6 servings
