Title:   Vegetable Stir-Fry in a Sweet and Savory Sauce

Ingredients:  
1/3 c clean pineapple/orange juice (or peach/mango)
2 T low-sodium soy sauce
1 T molasses
1 inch fresh ginger- grated
1/2 t Chinese five-spice powder
3 garlic cloves- minced
2 T sesame oil
1 large onion- thinly sliced
3 carrots- sliced diagonally
1 c small broccoli florets
1 c cauliflower pieces
1/2 heat white cabbage- shredded
1 red pepper- seeded, cored and julienned
1 cup pea pods- trimmed
1 can sliced water chestnuts- drained and rinsed
Basmati rice
Chopped cashews or peanuts
Directions:   Combine the juice, soy sauce, molasses, spices and garlic in a measuring cup and blend well. Set aside. In a large skillet, heat the oil over medium-high heat and quickly stir-fry the onion for 3 minutes. Add the carrots, broccoli, cauliflower, cabbage and pepper, stirring briskly for 5 minutes. Add in the pea pods and water chestnuts and stir-fry for 4 to 5 minutes. Add in the stir-fry sauce and mix well. Cook for anohter 3 to 5 minutes, until vegetables are just tender-crisp. Serve over steamed basmati rice and garnish with chopped cashews or peanuts.
