Ingredients: |
1 to 2 T extra-virgin olive oil
1 onion- thinly sliced
4 garlic cloves- minced
1 red pepper- cored, seeded and sliced very thin
2 anaheim chili peppers- cored, seeded and chopped
1 t cumin
1 t chili powder
1 pckg. baked seasoned Mexican-style tofu- sliced into bite-size pieces
2 T lime juice
1 T chopped fresh cilantro
Sea salt
Black pepper- freshly ground
8 clean corn tacos
16 cherry tomatoes- halved
2 c shredded lettuce

Directions: | In a large nonstick skillet, heat the olive oil over medium heat and saute the onion and garlic for 3 minutes. Add the peppers, sprinkle with cumin and chili powder, and saute until the peppers are tender-crisp, about 5 minutes. Add the baked tofu and sprinkle in lime juice and cilantro, mix together, and season with sea salt and freshly ground pepper, to taste. Remove from heat and set aside. Set up the taco shells and fill each one halfway with the skillet mixture. Top with fresh shredded lettuce and tomatoes. Note: If you do not have corn tacos, substitute with pita bread halves. |
