Ingredients: |
2 T extra-virgin olive oil
1 onion- chopped fine
2 garlic cloves- minced
1 can (28 oz.) crushed tomatoes
1 medium potato- peeled and diced
2 c tomato juice
2 t raw sugar (or other sweetener)
1 bay leaf
Sea salt
White pepper- freshly ground
2 c non-dairy milk
1/4 c chopped fresh basil
2 T chopped fresh Italian parsley
Nutmeg

Directions: | In a heavy soup pot, heat the olive oil over medium heat and saute the onion and garlic lightly for 4 to 5 minutes. Add in the canned tomatoes, potato, tomato juice, sugar, bay leaf, sea salt and white pepper. Stir together and bring to a high simmer. Reduce heat and simmer for 20 minutes. Slowly stir in milk, herbs and a pinch of nutmeg. Gently heat through, without boiling. Serve piping hot with some warm cornbread or focaccia. |
