Title:   Spicy Peanut Dressing
Category:   Sauces & Gravies - Clean (Only natural/organic ingredients), Vegetarian
From:   The Shoshoni Cookbook
1 c natural, unsalted peanut butter
2 to 3 c water
1 T fresh gingerroot- grated
2 T rice vinegar
1 t sea salt
1/2 t Chinese red chili paste with garlic- or 2 cloves crushed garlic and 1/2 t crushed red chilies or cayenne
Directions:   Puree all ingredients in a blender until smooth. Adjust seasonings to taste. Use as a dip for raw vegetables- also good with steamed vegetables and brown rice.
Makes:   3 cups
