Title:   Creamy Ginger-Lime Dressing
Category:   Sauces & Gravies - Clean (Only natural/organic ingredients), Vegetarian
From:   The Shoshoni Cookbook
2 T fresh gingerroot- grated
2 limes- juiced
2 lemons- juiced
1 clove garlic- minced
2 T olive oil
2 pckg. (10 1/4 oz.) silken tofu
3 T fresh basil- chopped
1 c soymilk
1/2 t sea salt
Pinch black pepper
Directions:   Puree all ingredients in a blender, or whisk until smooth. A zesty complement to summer greens and fresh vegetables.
Makes:   2/1 2 cups
