Title:   Cauliflower and Squash Bisque

1/2 c onion- chopped
1/2 t olive oil
2 c butternut squash- peeled and cubed
3 c cauliflower florets
1 c carrots- peeled and chopped
6 c water or vegetable stock
1/3 c rolled oats
1/2 t sea salt
Pinch black pepper
Pinch ground nutmeg
Directions:   In a large soup pot, saute onions in olive oil until translucent. Add squash, cauliflower, and carrots. Cook 5 minutes. Add stock, oats and salt. Bring to a boil, then lower heat, cover and simmer 30 minutes. Puree soup in a blender until creamy. Add more liquid if needed. Before serving add pepper and nutmeg.
Makes:   6 to 8 servings
