Title:   Blueberry Walnut Pancakes

1 c whole wheat pastry flour
1/2 c rolled oats
1/2 t sea salt
1 T baking powder
1/2 t cinnamon
1 3/4 c soymilk or rice milk
1 T vegetable oil
1 c fresh or frozen blueberries
2 ripe bananas- sliced
1/2 c walnut pieces
Directions:   In a large mixing bowl, combine flour, oats, salt, baking powder and cinnamon. Whip soymilk or rice milk and oil for 1 minute by hand or in a blender until frothy and light. Pour wet ingredients into flour and mix well. Stir in blueberries, bananas and walnuts. Preheat a lightly oiled griddle or skillet on medium until hot but not smoking. Pour 1/4 c batter on the griddle. Cook about 3 minutes on the first side until bubbles form in center of cakes and bottoms are lightly browned. Turn and cook second side until lightly browned. If bubbles form before first side is brown, turn heat up slightly. If first side turns too dark before bubbles form, turn griddle down. Serve with Fresh Strawberry Syrup or Orange-Honey Syrup
