Title:   Everyday Hash Browns

From:   Classic 1000 Vegetarian Recipes
3 T oil
1 onion- chopped
1 lb. potatoes- finely diced
Sea salt and freshly ground black pepper
Directions:   Heat the oil and saute the onion over low heat for 5 minutes until soft. Transfer to a plate. Add the potatoes to the pan and fry for 10 to 15 minutes until golden on the outside and soft on the inside. Return the onions to the pan, stir and season well with salt and pepper. Cook until warmed through.

Optional: Potatoes O'Brien- add 1 chopped bell pepper and saute with onion.
