Title:   Broccoli in Tomato Sauce

Ingredients:  
2 T olive oil
1 onion- chopped
1/4 c wholemeal flour
1 large can chopped tomatoes
Sea salt and freshly ground black pepper
1/2 t sweetener [agave nectar, honey]
1 1/2 lb. broccoli- cut into florets and cooked
1 c cheddar cheese- grated [or non-dairy for Vegan]
A few toasted flaked almonds
Directions:   Heat the oil and saute the onion for 3 minutes until soft. Stir in the flour and cook for 1 minute. Add the tomatoes, salt, pepper and sweetener and cover. Bring to a boil, reduce the heat and simmer for 5 minutes, stirring occasionally. Put the broccoli in a greased ovenproof dish, pour the tomato sauce over and sprinkle with grated cheese. Bake in a preheated oven at 375F for 30 minutes or until the topping is golden and bubbling. Sprinkle with almonds and serve.
